Yes it can be scary, but it also opens some new doors. In fact, if you missed our last support group, you missed the opportunity to try some new foods! We sampled jicama, edamame and kiwi. Our participants had lots of input on ways to incorporate these new foods into their diets. You may ask, what is the benefit? Expanding your selections to include more variety means you don’t have to eat the same things over and over again–and less boredome means you may be more likely to stick to a healthy meal plan. New foods also mean new nutrients. Every different color fruit and vegetable provides our body with different vitamins, which is important for overall health, maybe even cancer prevention. I just discovered this recipe for Eggplant Saute with Shallots, Basil, and Oregano on http://www.foodfit.com. I’m going to try it this weekend! Give it a shot for yourself and let me know what you think. Pair it with some whole wheat pasta for an delicious, nutritious, and of course, carb-friendly dinner.
